Paneer Tikka with Cucumber and Tomato Salad is a delicious and nutritious Indian dish that can be enjoyed as a part of a weight loss diet. Paneer, a type of Indian cottage cheese, is marinated in flavorful spices and grilled to perfection. It is then served with a refreshing cucumber and tomato salad. Here’s the step-by-step process to make this dish,

INGREDIENTS

For Paneer Tikka:

  • 200 grams paneer, cut into cubes
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons besan (gram flour)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Skewers for grilling

For Cucumber and Tomato Salad:

  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1 green chili, finely chopped (optional)
  • Fresh coriander leaves, chopped
  • Salt to taste
  • Lemon juice for dressing

INSTRUCTIONS

  1. In a mixing bowl, combine Greek yogurt, besan, ginger-garlic paste, lemon juice, garam masala, turmeric powder, cumin powder, coriander powder, and salt. Mix well to form a smooth marinade.
  2. Add paneer cubes to the marinade and gently toss until each paneer cube is coated evenly. Let it marinate for at least 30 minutes to allow the flavors to infuse.
  3. While the paneer is marinating, soak the skewers in water to prevent them from burning during grilling.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated paneer cubes onto the skewers.
  6. Grill the paneer skewers for about 2-3 minutes on each side, or until they turn golden brown and slightly charred.
  7. Remove the paneer skewers from the grill and set them aside.
  8. In a separate bowl, combine diced cucumber, tomatoes, red onion, green chili (if using), and chopped coriander leaves. Season with salt and dress with lemon juice. Toss well to combine.
  9. Arrange the grilled paneer skewers on a serving plate and serve alongside the cucumber and tomato salad.

TIPS

  • If you don’t have a grill or grill pan, you can also cook the paneer skewers on a stovetop in a non-stick pan.
  • Soaking the skewers in water before grilling helps prevent them from burning.
  • For added flavor, you can sprinkle some chaat masala or roasted cumin powder on top of the paneer tikka.
  • Customize the salad by adding other vegetables like bell peppers or lettuce.
  • Serve the paneer tikka and salad with a side of mint chutney or yogurt dip for extra taste.
  • This dish can be enjoyed as an appetizer or as a main course with a side of whole wheat roti or brown rice.
