Palak Puri is made by pureeing fresh spinach leaves and incorporating them into a dough along with flour and spices.   • 2 cups spinach leaves, washed and blanched
  • 2 cups whole wheat flour (atta)
  • 1 teaspoon cumin seeds
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon red chili powder (optional)
  • Oil for deep frying

INSTRUCTIONS

  1. In a blender or food processor, blend the blanched spinach leaves into a smooth puree. Set aside.
  2. In a mixing bowl, combine the whole wheat flour, cumin seeds, salt, and red chili powder (if using). Mix well.
  3. Add the spinach puree to the flour mixture and knead it into a smooth dough. You may need to add a little water if the dough is too dry or more flour if it’s too sticky. Let the dough rest for 10-15 minutes.
  4. Divide the dough into small portions and roll them into small circles using a rolling pin and some flour to prevent sticking.
  5. Heat oil in a deep frying pan or kadai over medium heat.
  6. Once the oil is hot, carefully slide the rolled puris into the oil, one at a time. Fry them until they puff up and turn golden brown on both sides.
  7. Remove the fried puris from the oil using a slotted spoon and drain them on a paper towel to remove excess oil.
  8. Repeat the frying process with the remaining rolled puris.
  9. Serve the Palak Puris hot with your favorite side dish, such as potato curry or chutney.
