PALAK PURI RECIPE

- 2 cups spinach leaves, washed and blanched
- 2 cups whole wheat flour (atta)
- 1 teaspoon cumin seeds
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon red chili powder (optional)
- Oil for deep frying
INSTRUCTIONS
- In a blender or food processor, blend the blanched spinach leaves into a smooth puree. Set aside.
- In a mixing bowl, combine the whole wheat flour, cumin seeds, salt, and red chili powder (if using). Mix well.
- Add the spinach puree to the flour mixture and knead it into a smooth dough. You may need to add a little water if the dough is too dry or more flour if it’s too sticky. Let the dough rest for 10-15 minutes.
- Divide the dough into small portions and roll them into small circles using a rolling pin and some flour to prevent sticking.
- Heat oil in a deep frying pan or kadai over medium heat.
- Once the oil is hot, carefully slide the rolled puris into the oil, one at a time. Fry them until they puff up and turn golden brown on both sides.
- Remove the fried puris from the oil using a slotted spoon and drain them on a paper towel to remove excess oil.
- Repeat the frying process with the remaining rolled puris.
- Serve the Palak Puris hot with your favorite side dish, such as potato curry or chutney.
