  • 2 tablespoons ghee or oil
  • 1/2 teaspoon cumin seeds
  • 4-5 cups water
  • Fresh cilantro leaves, chopped (for garnishing)
  • Lemon wedges (for serving)

INSTRUCTIONS

  1. Prepare Moong Dal and Rice: Wash and soak the moong dal and rice separately for about 30 minutes. Drain before using.

  2. Sauté Aromatics: In a large pot, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.

  3. Add Onion and Garlic: Add chopped onions and sauté until they become translucent. Add minced garlic and ginger paste. Sauté for a minute until fragrant.

  4. Add Vegetables: Add chopped tomatoes and mixed vegetables. Cook until the tomatoes soften and the vegetables start to cook.

  5. Add Spices: Stir in turmeric powder, cumin powder, coriander powder, garam masala, red chili powder, and salt. Mix well to coat the vegetables with the spices.

  6. Add Moong Dal and Rice: Drain the soaked moong dal and rice, and add them to the pot. Mix well with the onion and spice mixture.

  7. Add Water: Pour in 4-5 cups of water, depending on the desired consistency of the khichdi.

  8. Cook Khichdi: Bring the mixture to a boil. Lower the heat, cover the pot, and let the khichdi simmer for about 20-25 minutes, or until the rice and dal are fully cooked and the khichdi has a porridge-like consistency.

  9. Adjust Seasoning: Taste and adjust the salt and spiciness according to your preference.

  10. Serve: Garnish the moong dal khichdi with chopped cilantro leaves. Serve with yogurt, pickles, or lemon wedges for added flavor.
