
Methi Thepla Fenugreek Flatbread

INGREDIENTS
- 1 cup whole wheat flour
- 1/4 cup chickpea flour (besan)
- 1 cup fresh fenugreek leaves (methi), finely chopped
- 1/4 cup yogurt
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon ginger paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon asafoetida (hing)
- Salt to taste
- 1 tablespoon oil + extra for cooking the theplas
- Water (as needed) to knead the dough
INSTRUCTIONS
Prepare the Dough: In a mixing bowl, combine whole wheat flour, chickpea flour, chopped fenugreek leaves, chopped onion, green chilies, ginger paste, yogurt, oil, turmeric powder, red chili powder, cumin powder, coriander powder, asafoetida, and salt. Mix well.
Gradually add water and knead to form a soft and smooth dough. Let the dough rest for about 15-20 minutes.
Roll and Cook the Theplas:
- Divide the dough into equal-sized balls.
- Take a dough ball and roll it out into a thin round disc using a rolling pin and a little flour to prevent sticking.
- Heat a skillet or tawa over medium heat. Place the rolled thepla on it.
- Cook until small bubbles start to appear on the surface, then flip the thepla.
- Drizzle a little oil on the cooked side and spread it using a spatula.
- Cook until both sides are golden brown and cooked through.
- Repeat the process for the remaining dough balls.
Serve: Serve the methi theplas hot with yogurt, pickle, or chutney.
TIPS
- You can adjust the quantity of fenugreek leaves, green chilies, and spices according to your taste.
- If fresh fenugreek leaves are not available, you can use dried fenugreek leaves (kasuri methi) soaked in water.
- To enhance the flavor, you can add sesame seeds to the dough.
- Serve the theplas with plain yogurt or a dollop of butter for added richness.
