INGREDIENTS

For Masoor Dal Soup:

  • 1 cup masoor dal (red lentils)
  • 4 cups water
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

For Vegetable Salad

  • Assorted vegetables (such as cucumber, bell peppers, carrots, cherry tomatoes)
  • Lettuce leaves
  • Fresh coriander leaves
  • Lemon juice
  • Salt and pepper to taste

INSTRUCTIONS

  1. Rinse the masoor dal thoroughly under running water until the water runs clear.
  2. In a pressure cooker or a pot, add the masoor dal, water, chopped onions, tomatoes, minced garlic, grated ginger, cumin seeds, turmeric powder, red chili powder, and salt.
  3. Pressure cook for about 4-5 whistles or simmer on the stovetop until the dal is cooked and soft.
  4. Once the dal is cooked, use a hand blender or a whisk to blend it until smooth. Adjust the consistency by adding more water if desired.
  5. Heat a small pan with a little oil. Add cumin seeds and let them splutter.
  6. Pour the tempering over the dal soup and mix well.
  7. Garnish the soup with fresh coriander leaves and serve hot with lemon wedges.

For Vegetable Salad:

  1. Chop the assorted vegetables into small, bite-sized pieces.
  2. In a bowl, combine the chopped vegetables, lettuce leaves, and fresh coriander leaves.
  3. Drizzle lemon juice over the salad and sprinkle with salt and pepper.
  4. Toss the salad gently to combine all the ingredients.
