Malai Toast is a delicious Indian-style toast where bread slices are generously spread with a creamy and sweet malai (milk) mixture and then toasted to perfection. The malai mixture is made by simmering milk, condensed milk, sugar, and cardamom powder until it thickens and forms a rich custard-like consistency. The bread slices are then toasted on a tawa or pan until they become crispy and caramelized, with a creamy and sweet layer of malai on top. Malai Toast is a popular breakfast or tea-time snack in India and is loved for its creamy and indulgent taste.

INGREDIENTS

  • 4 slices of bread
  • 1 cup milk
  • 2 tablespoons ghee or butter
  • 1/2 cup condensed milk
  • 1/4 cup sugar
  • 1/4 teaspoon cardamom powder
  • Chopped nuts (such as almonds, pistachios) for garnish (optional)

INSTRUCTIONS

  1. In a pan, heat ghee or butter over medium heat.
  2. Toast the bread slices on both sides until they turn golden brown and crisp. Set aside.
  3. In the same pan, add milk and bring it to a boil. Reduce the heat and let it simmer for a few minutes until it thickens slightly.
  4. Add condensed milk, sugar, and cardamom powder to the milk. Mix well until the sugar is dissolved.
  5. Continue to cook the milk mixture on low heat, stirring continuously, until it thickens to a custard-like consistency. This may take about 10-15 minutes.
  6. Remove the pan from heat and let the mixture cool slightly.
  7. Spread a generous amount of the prepared malai (milk mixture) on one side of each toasted bread slice.
  8. Heat a pan or tawa over medium heat and place the bread slices with the malai side facing down.
  9. Cook the bread slices for a couple of minutes until the malai side is nicely toasted and caramelized. Flip the slices and cook for another minute or so.
  10. Remove the Malai Toast from the pan and garnish with chopped nuts if desired.
  11. Serve the Malai Toast warm as a delightful breakfast or tea-time snack.

TIPS

  • You can use any type of bread for this recipe, such as white bread, wheat bread, or multigrain bread.
  • Adjust the amount of sugar according to your taste preference. You can add more or less sugar as desired.
  • Feel free to add your choice of nuts or dried fruits for added texture and flavor.
  • Serve Malai Toast as soon as it is prepared to enjoy it at its best. The toasted bread tends to soften over time.
  • You can also sprinkle a pinch of cinnamon powder or nutmeg powder on top for extra flavor.
