LENTIL CURRY WITH BROWN RICE RECIPE

INGREDIENTS
For Lentil Curry:
- 1 cup lentils (any variety), washed and soaked for 30 minutes
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1-inch ginger, grated
- 1 green chili, finely chopped (optional)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
For Brown Rice:
- 1 cup brown rice
- 2 cups water
- Salt to taste
INSTRUCTIONS
- Rinse the brown rice under running water to remove any impurities.
- In a pot, add the rinsed brown rice, water, and salt. Bring it to a boil, then reduce the heat, cover, and simmer for about 40-45 minutes or until the rice is cooked and tender. Set aside.
- Heat a tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic, grated ginger, and green chili (if using). Sauté for another minute.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the coriander powder, turmeric powder, red chili powder, and salt. Mix well.
- Drain the soaked lentils and add them to the pan. Stir everything together.
- Add enough water to cover the lentils. Bring it to a boil, then reduce the heat and let it simmer for about 25-30 minutes or until the lentils are cooked and tender.
- Once the lentils are cooked, garnish with fresh coriander leaves.
- Serve the lentil curry hot with brown rice and lemon wedges.
