INGREDIENTS

For the Lentil and Vegetable Quinoa:

INSTRUCTIONS

Quinoa:

  1. In a medium saucepan, bring water or vegetable broth to a boil. Add the rinsed quinoa and a pinch of salt.

  2. Reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff the quinoa with a fork.

Lentil and Vegetable Stir-Fry:

  1. In a large skillet or wok, heat the olive oil over medium-high heat.

  2. Add the finely chopped red onion and minced garlic to the hot oil. Sauté for about 2 minutes until fragrant and slightly softened.
