Lentil and Spinach Stuffed Portobello Mushrooms
Lentil and Spinach Stuffed Portobello Mushrooms are a delectable and nutritious dish that combines the earthy richness of Portobello mushrooms with a hearty and flavorful lentil-spinach filling. INGREDIENTS
- 4 large Portobello mushrooms, stems removed and caps cleaned
- 1 cup cooked green or brown lentils (canned or cooked from dried)
- 2 cups fresh spinach, chopped
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese (optional)
- Olive oil for brushing
INSTRUCTIONS
Preheat the oven to 375°F (190°C).
Brush the Portobello mushroom caps with olive oil and place them on a baking sheet, gill side up.
In a skillet, heat a bit of olive oil over medium heat.
Add the chopped onion and sauté until it turns translucent.
Stir in minced garlic and sauté for another minute until fragrant.
Add chopped spinach to the skillet and cook until it wilts.
Stir in cooked lentils, dried thyme, dried oregano, red pepper flakes, salt, and pepper. Cook for a few minutes to combine and heat through.
Fill the Portobello mushroom caps with the lentil and spinach mixture, pressing it down gently.
If using, sprinkle grated Parmesan cheese on top of the stuffed mushrooms.
Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the filling is heated.
Assembling the Dish:
Carefully remove the stuffed Portobello mushrooms from the oven.
Serve the Lentil and Spinach Stuffed Portobello Mushrooms on plates.
Garnish with extra grated Parmesan cheese and fresh herbs if desired.
TIPS
You can use other types of mushrooms if Portobello mushrooms are not available.
