INGREDIENTS

For the Lemon Garlic Shrimp:

  • 500 grams of shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon red chili flakes (optional)
  • Salt and pepper to taste

For the Cauliflower Rice:

  • 1 medium-sized cauliflower head
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley or coriander leaves for garnishing

INSTRUCTIONS

  1. Prepare the Cauliflower Rice:

    • Cut the cauliflower into florets and wash them thoroughly.
    • Place the florets in a food processor and pulse until they resemble rice-like grains.
    • Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic. Sauté until they become translucent.
    • Add the cauliflower rice to the pan and cook for 5-7 minutes, stirring occasionally, until it becomes tender. Season with salt and pepper. Remove from heat and set aside.
  2. Cook the Lemon Garlic Shrimp:

    • In a bowl, combine minced garlic, olive oil, lemon juice, lemon zest, red chili flakes (if using), salt, and pepper.
    • Add the shrimp to the bowl and toss well to coat them evenly with the marinade. Let it marinate for about 10-15 minutes.
    • Heat a skillet or frying pan over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
    • Once cooked, remove the shrimp from the pan and set aside.
  3. Serve:

    • Divide the cauliflower rice into serving plates. Top with the lemon garlic shrimp.
    • Garnish with fresh parsley or coriander leaves for added freshness and flavor.

TIPS

  1. Use fresh shrimp for the best flavor and texture. You can also adjust the amount of garlic, lemon juice, and red chili flakes according to your taste preferences.
  2. Be mindful of the cooking time for the shrimp to avoid overcooking, as it can become rubbery.
  3. If you prefer a milder flavor, reduce the amount of garlic and lemon zest.
  4. Customize the dish by adding your favorite vegetables to the cauliflower rice, such as bell peppers, carrots, or peas.
  5. Feel free to add additional herbs and spices to the dish, such as paprika, cumin, or parsley, to enhance the flavor profile.
