The Grilled Portobello Mushroom Sandwich is a delightful and hearty option that caters to both vegans and omnivores alike. Portobello mushrooms, marinated in balsamic vinegar and seasonings, take center stage in this sandwich, offering a rich and satisfying umami flavor.
INGREDIENTS
For the Marinade:
- 4 large Portobello mushrooms, cleaned and stems removed
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the Sandwich:
- 4 whole wheat or ciabatta rolls
- 1/2 cup roasted red bell peppers (jarred or homemade), sliced
- 1 cup baby spinach or arugula
- 1/2 cup sliced red onions
- 1/2 cup vegan mozzarella or your favorite vegan cheese (optional)
- Vegan mayonnaise or aioli for spreading (optional)
- Olive oil for grilling
INSTRUCTIONS
For the Marinade:
In a bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried thyme, salt, and pepper.
Place the cleaned Portobello mushrooms in a shallow dish, gill side up, and pour the marinade over them.
Let the mushrooms marinate for at least 30 minutes, turning them occasionally to ensure even coating.
To Grill the Portobello Mushrooms:
Preheat your grill to medium-high heat.
Brush the grill grates with a bit of olive oil to prevent sticking.
Place the marinated Portobello mushrooms on the grill, gill side down.
Grill for about 4-5 minutes on each side or until they are tender and have nice grill marks. Baste with any remaining marinade while grilling.
Remove the mushrooms from the grill and set them aside.
To Assemble the Sandwich:
Slice the whole wheat or ciabatta rolls in half.
If desired, spread vegan mayonnaise or aioli on the bottom half of each roll.
Place a grilled Portobello mushroom on each roll.
Layer with roasted red bell peppers, baby spinach or arugula, sliced red onions, and vegan mozzarella cheese (if using).
Top with the other half of the roll.
Optional: Wrap each sandwich in aluminum foil and warm on the grill for a couple of minutes to melt the cheese and heat the sandwich.
Serve hot, and enjoy your Grilled Portobello Mushroom Sandwich.
TIPS
- Feel free to add other toppings like sliced tomatoes, avocado, or fresh herbs for additional flavor and freshness.
- Experiment with different vegan cheeses or skip the cheese altogether if you prefer a lighter option.
- If you don’t have a grill, you can also cook the Portobello mushrooms on a stovetop grill pan or in the oven.
