INGREDIENTS

For Grilled Paneer Skewers:

  • 200g paneer (Indian cottage cheese), cut into cubes
  • 1 bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • Cherry tomatoes (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder

  • 1-2 tablespoons lemon juice
  • Water as needed

INSTRUCTIONS

For Grilled Paneer Skewers:

  1. In a bowl, mix olive oil, cumin powder, red chili powder, garam masala, and salt to create a marinade.

  2. Add paneer cubes, bell pepper chunks, onion chunks, and cherry tomatoes (if using) to the marinade. Toss well to coat the pieces with the spices and oil.

  3. Thread the marinated paneer, bell pepper, onion, and cherry tomato pieces onto skewers, alternating between them.

  4. Preheat a grill or grill pan over medium-high heat. Brush the grill grates lightly with oil.

  5. Grill the skewers for about 2-3 minutes on each side, or until the paneer is lightly charred and the vegetables are tender.

  6. Remove the skewers from the grill and squeeze fresh lemon juice over them.

For Mint Chutney:

  1. In a blender or food processor, combine fresh mint leaves, cilantro leaves, green chili, ginger paste, cumin powder, chaat masala (if using), salt, and lemon juice.

  2. Blend until you get a smooth chutney. If needed, add a little water to achieve the desired consistency.

  3. Taste and adjust the seasoning, adding more salt or lemon juice if needed.
