Grilled Eggplant and Cottage Cheese Rolls

INGREDIENTS
- Large eggplant
- Cottage cheese (unsweetened)

INSTRUCTIONS
Preheat your grill or grill pan to medium-high heat.
Wash the eggplant and slice it lengthwise into thin, approximately 1/4-inch thick slices.
Brush each eggplant slice lightly with olive oil on both sides to prevent sticking and enhance flavor.
Place the eggplant slices on the grill and cook for about 2-3 minutes on each side, or until they are tender and have grill marks. Remove from the grill and set aside.
In a bowl, mix the cottage cheese with torn or chopped fresh basil leaves. Season with a pinch of salt and pepper to taste.
Lay out an eggplant slice on a clean surface. Place a spoonful of the cottage cheese mixture at one end of the slice.
Carefully roll up the eggplant slice, enclosing the cottage cheese mixture, to create a roll. Repeat this process with the remaining eggplant slices and cottage cheese mixture.
If desired, drizzle a small amount of balsamic reduction over the rolls for added flavor.
