INGREDIENTS

  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1 medium onion, cut into chunks
  • 1 medium bell pepper, cut into chunks
  • 1 medium zucchini, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

INSTRUCTIONS

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, turmeric, chili powder, salt, and pepper. Mix well to make the marinade.

  2. Add the chicken cubes to the marinade and toss to coat. Let it marinate in the refrigerator for at least 1 hour, or overnight for better flavor.

  3. Preheat your grill or grill pan over medium heat.

  4. Thread the marinated chicken, onion chunks, bell pepper chunks, and zucchini chunks onto the soaked wooden skewers, alternating between ingredients.
