Gobi Masala, also known as Cauliflower Masala, is a popular Indian dish that features tender cauliflower florets cooked in a flavorful tomato-based gravy. This recipe is suitable for Indian weight loss diets as it is low in calories and fat while being rich in fiber and essential nutrients. It pairs well with rice or roti and is a delicious and satisfying vegetarian option.

INGREDIENTS

  • 1 medium-sized cauliflower, cut into florets
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust according to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh cilantro leaves, chopped (for garnish)

INSTRUCTIONS

  1. Heat oil in a large pan or pot over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds until fragrant.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add minced garlic, grated ginger, and green chili (if using). Sauté for a minute until aromatic.
  5. Add the tomato puree and cook for a few minutes until the raw smell disappears.
  6. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  7. Add the cauliflower florets and stir to coat them with the spice mixture.
  8. Cover the pan and cook for about 15-20 minutes or until the cauliflower is tender, stirring occasionally.
  9. Once the cauliflower is cooked, sprinkle garam masala over the curry and mix well.
  10. Adjust salt and spices according to taste.
  11. Garnish with chopped cilantro leaves.
  12. Serve hot with steamed rice or roti.

TIPS

  1. Choose a fresh and firm cauliflower for the best texture in the curry.
  2. You can blanch the cauliflower florets in hot water for a few minutes before adding them to the curry to ensure they cook evenly.
  3. Add a handful of green peas or diced bell peppers for additional flavor and color.
  4. For a creamier texture, you can add a splash of coconut milk or cashew paste to the curry.
  5. Leftover Gobi Masala can be stored in the refrigerator for a few days and reheated when needed.
