INGREDIENTS

  • 6 large eggs
  • 1/4 cup milk or unsweetened almond milk (optional)
  • 1/2 cup chopped vegetables (bell peppers, spinach, onions, tomatoes, etc.)
  • 1/2 cup shredded cheese (cheddar, mozzarella, feta, etc.)
  • Salt and pepper to taste
  • Cooking spray or muffin liners

Optional Add-ins:

  • Cooked and crumbled breakfast sausage, bacon, or ham
  • Diced cooked potatoes or sweet potatoes
  • Fresh herbs (parsley, chives, cilantro, etc.)
  • Hot sauce or chili flakes for a spicy kick

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or line it with muffin liners.

  2. In a large mixing bowl, whisk the eggs until well beaten. If using, add the milk and whisk again to combine.

  3. Stir in the chopped vegetables and shredded cheese into the egg mixture. Add salt and pepper to taste.

  4. If using any optional add-ins, fold them into the egg mixture.

  5. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.

  6. Bake the egg muffins in the preheated oven for about 15-20 minutes or until the eggs are set and lightly golden on top.

  7. Remove the muffin tin from the oven and let the egg muffins cool slightly before serving.

  8. Serve the Egg Muffins warm and enjoy!
