INGREDIENTS

  • 2 cups cooked rice (preferably leftover rice)
  • 200 grams shrimp, peeled and deveined
  • 2 eggs, beaten

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce

INSTRUCTIONS

  1. Heat oil in a large skillet or wok over medium heat. Add the chopped onion and minced garlic. Sauté until the onion turns translucent.

  2. Add the shrimp to the skillet and cook until they turn pink and are cooked through. Remove the shrimp from the skillet and set them aside.

  3. In the same skillet, push the onion and garlic to one side and pour the beaten eggs onto the other side. Scramble the eggs until they are fully cooked.

  4. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they are slightly tender.

  5. Add the cooked rice to the skillet and stir-fry with the vegetables. Break up any clumps of rice using a spatula.

  6. Pour the soy sauce over the rice and vegetables. Mix well to ensure that the soy sauce is evenly distributed.

  7. Add the cooked shrimp back into the skillet and stir-fry for another minute to heat them through.

  8. Season with salt and pepper according to taste. Stir-fry for an additional minute.

  9. Remove the skillet from heat. Garnish with chopped spring onions.

TIPS

  1. It’s best to use leftover cooked rice that has been chilled overnight as it is drier and results in a better texture for fried rice. If using freshly cooked rice, spread it out on a baking sheet and let it cool in the refrigerator for a few hours before using.
