INGREDIENTS

  • 2 chicken breasts, thinly sliced
  • 3 eggs, beaten
  • 2 cups cooked brown rice
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli, snap peas, etc.)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

INSTRUCTIONS

  1. Heat a large skillet or wok over medium heat and add a drizzle of olive oil.
  2. Add the chicken slices to the skillet and cook until they are no longer pink in the center. Remove the cooked chicken from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed, then pour in the beaten eggs. Scramble the eggs until they are fully cooked. Remove the scrambled eggs from the skillet and set aside.
  4. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  5. Add the mixed vegetables to the skillet and cook until they are tender-crisp.
  6. Return the cooked chicken and scrambled eggs to the skillet with the vegetables.
  7. Add the cooked brown rice to the skillet and mix everything together.
  8. Drizzle soy sauce, oyster sauce, and sesame oil over the mixture. Stir well to coat all the ingredients evenly.
  9. Season with salt and pepper according to your taste preferences.
  10. Continue to cook for a few more minutes until everything is heated through.
  11. Remove from heat and serve hot.

  1. Feel free to add other vegetables of your choice, such as mushrooms or zucchini, to the stir fry.
