Start your day with a delicious and protein-packed Egg and Chicken Breakfast Quesadilla. This recipe combines scrambled eggs, seasoned chicken, melted cheese, and flavorful vegetables, all folded into a warm tortilla. It’s a satisfying and easy-to-make breakfast option that will keep you energized throughout the morning.

INGREDIENTS

  • 4 large tortillas
  • 4 eggs
  • 1 cup cooked chicken breast, shredded or diced
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your preferred cheese)
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup diced onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • Salt and pepper to taste
  • Cooking oil or butter for greasing the pan

INSTRUCTIONS

  1. In a bowl, beat the eggs and season them with salt, pepper, chili powder, and cumin powder. Set aside.
  2. Heat a large non-stick skillet over medium heat and lightly grease it with cooking oil or butter.
  3. Add the diced bell peppers and onions to the skillet and sauté until they are tender.
  4. Add the cooked chicken breast to the skillet and cook for a couple of minutes to warm it up.
  5. Pour the beaten eggs into the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked to your desired consistency.

  12. Place the filled quesadillas on the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is fully melted.
  13. Remove the quesadillas from the skillet and let them cool for a minute.
  14. Cut each quesadilla into halves or quarters and serve hot.
