Dal vada, also known as lentil fritters, is a popular Indian snack made from soaked and ground lentils mixed with spices and deep-fried until crispy. It is a versatile dish that can be enjoyed as a snack or as part of a meal. The combination of chana dal and moong dal gives the vadas a unique flavor and texture. The vadas are typically served with mint chutney or tamarind chutney, adding a tangy and refreshing taste to complement the crispy vadas.
INGREDIENTS
- 1 cup chana dal (split Bengal gram)
- 1/4 cup moong dal (split yellow lentils)
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1/4 cup fresh coriander leaves, finely chopped
- 1/2 teaspoon ginger paste
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Salt to taste
- Oil for deep frying
INSTRUCTIONS
- Wash the chana dal and moong dal under running water. Soak them together in water for 3-4 hours.
- Drain the water from the soaked dal and transfer it to a blender or food processor. Grind it coarsely, without adding any water.
- Transfer the ground dal to a mixing bowl. Add chopped onions, green chilies, coriander leaves, ginger paste, cumin seeds, asafoetida, and salt. Mix everything well to combine.
- Heat oil in a deep frying pan or kadai over medium heat.
- Take a small portion of the dal mixture and shape it into a small round patty. Repeat with the remaining mixture.
- Carefully drop the vadas into the hot oil and fry them until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
- Once fried, remove the vadas using a slotted spoon and drain excess oil on a paper towel.
- Serve the dal vadas hot with mint chutney or tamarind chutney.
