Dal vada, also known as lentil fritters, is a popular Indian snack made from soaked and ground lentils mixed with spices and deep-fried until crispy. It is a versatile dish that can be enjoyed as a snack or as part of a meal. The combination of chana dal and moong dal gives the vadas a unique flavor and texture. The vadas are typically served with mint chutney or tamarind chutney, adding a tangy and refreshing taste to complement the crispy vadas.

INGREDIENTS

  • 1 cup chana dal (split Bengal gram)
  • 1/4 cup moong dal (split yellow lentils)
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/4 cup fresh coriander leaves, finely chopped
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Oil for deep frying

INSTRUCTIONS

  1. Wash the chana dal and moong dal under running water. Soak them together in water for 3-4 hours.
  2. Drain the water from the soaked dal and transfer it to a blender or food processor. Grind it coarsely, without adding any water.
  3. Transfer the ground dal to a mixing bowl. Add chopped onions, green chilies, coriander leaves, ginger paste, cumin seeds, asafoetida, and salt. Mix everything well to combine.
  4. Heat oil in a deep frying pan or kadai over medium heat.
  5. Take a small portion of the dal mixture and shape it into a small round patty. Repeat with the remaining mixture.
  6. Carefully drop the vadas into the hot oil and fry them until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
  7. Once fried, remove the vadas using a slotted spoon and drain excess oil on a paper towel.
  8. Serve the dal vadas hot with mint chutney or tamarind chutney.

  • Ensure that the dal mixture is well combined before shaping the vadas.
  • Adjust the spiciness by adding more or fewer green chilies.
