Dal Pakora is a popular Indian snack made with ground chana dal and a mix of spices. The soaked and ground dal is combined with onions, green chilies, and aromatic spices to create a flavorful batter. The pakoras are deep-fried until crispy and golden brown, resulting in a crunchy texture on the outside and a soft interior. Dal Pakoras are commonly served as an appetizer or evening snack and pair well with chutneys or sauces.

INGREDIENTS

  • 1 cup chana dal (split Bengal gram)
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 tablespoons chopped coriander leaves
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for deep frying

INSTRUCTIONS

  1. Soak chana dal in water for 2-3 hours. Drain the water and rinse the dal well.
  2. Transfer the soaked dal to a blender or food processor. Grind it coarsely without adding any water. The texture should be slightly grainy.
  3. Transfer the ground dal to a mixing bowl. Add chopped onions, green chilies, coriander leaves, cumin seeds, red chili powder, turmeric powder, garam masala, and salt. Mix well to combine all the ingredients.
  4. Heat oil in a deep frying pan or kadai over medium heat.
  5. Take a small portion of the dal mixture and shape it into a small round pakora using your hands. Make pakoras with the remaining mixture.
  6. Carefully drop the pakoras into the hot oil and fry them until golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
  7. Once the pakoras are golden brown, remove them from the oil using a slotted spoon and drain on a paper towel to remove excess oil.
  8. Serve the hot and crispy Dal Pakoras with mint chutney, tamarind chutney, or tomato ketchup.

TIPS

  • Soak the chana dal for a few hours to ensure it softens properly.
  • Do not grind the dal to a smooth paste; a slightly coarse texture gives the pakoras a nice texture.
  • Adjust the spice levels by adding more or fewer green chilies and spices according to your preference.
  • Use fresh oil for frying to ensure the pakoras turn out crispy and not greasy.
  • Serve the pakoras immediately for the best taste and texture.
  • You can experiment with adding other ingredients like grated vegetables or herbs to the batter for additional flavor and texture.
