INSTRUCTIONS
Grate the peeled cucumber using a box grater or a food processor with a grating attachment. Place the grated cucumber in a fine-mesh strainer or a clean kitchen towel, and squeeze out excess moisture. Set aside.
In a mixing bowl, combine the coconut yogurt, finely chopped mint leaves, finely chopped cilantro leaves, minced garlic, ground cumin, salt, black pepper, and lemon juice.
