Collard Green Wraps
Collard Green Wraps are a low-calorie and nutrient-dense option for individuals following an Indian weight loss diet:

Mixed vegetables offer vitamins, minerals, and fiber.
Protein sources contribute satiety and muscle support.
INGREDIENTS
For the Wraps:
- 4 large collard green leaves, stems removed
- 1 cup cooked quinoa or brown rice
- 1 cup mixed vegetables (such as shredded carrots, bell peppers, cucumber), julienned
- 1/2 avocado, sliced
- 1/4 cup hummus or tahini sauce
- Fresh herbs (such as cilantro or mint), for garnish
For the Filling:
- 1 cup protein of your choice (such as cooked chicken, tofu, chickpeas, or lentils)
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Optional: herbs and spices (such as cumin, paprika, or garlic powder)
INSTRUCTIONS
For the Filling:
- If using cooked chicken, tofu, chickpeas, or lentils, season with olive oil, lemon juice, salt, pepper, and optional herbs and spices. Set aside.
For the Collard Green Wraps:
Wash the collard green leaves and pat them dry using a clean kitchen towel.
Use a knife to carefully trim the stem of each collard green leaf, making it easier to fold.
Place the collard green leaves in a large pot of boiling water for about 10-15 seconds. This blanching step will soften the leaves and make them easier to wrap.
Remove the leaves from the pot and immediately transfer them to a bowl of ice water to stop the cooking process. Pat the leaves dry with a paper towel.
Lay a collard green leaf flat on a clean surface.
In the center of the leaf, layer a portion of cooked quinoa or brown rice, mixed vegetables, sliced avocado, and the prepared protein of your choice.
Drizzle hummus or tahini sauce over the filling.
Carefully fold the sides of the collard green leaf inward, then roll it up like a burrito.
Repeat the process with the remaining collard green leaves and ingredients.
Secure the wraps with toothpicks if needed.
Garnish the Collard Green Wraps with fresh herbs.
Serve the wraps immediately as a nutritious and flavorful meal.
