Chole Bhature is a popular North Indian dish consisting of spicy and tangy chickpea curry (chole) served with deep-fried bread (bhature). The chickpeas are cooked in a flavorful onion-tomato masala along with aromatic spices, giving it a rich and hearty taste. The bhature are made from a soft dough of all-purpose flour and yogurt, which are deep-fried until they become puffy and golden brown. Chole Bhature is often enjoyed as a special breakfast or brunch item and is a favorite street food in India.

INGREDIENTS

Chole (Chickpea Curry):

  • 1 cup dried chickpeas (chole), soaked overnight and drained
  • 2 medium-sized onions, finely chopped
  • 2 medium-sized tomatoes, pureed
  • 2-3 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • 1 teaspoon amchur (dried mango powder)
  • 1 tablespoon oil
  • Salt to taste
  • Fresh coriander leaves for garnish

 Bhature (Fried Bread):

  • 2 cups all-purpose flour (maida)
  • 1/2 cup plain yogurt (dahi)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon oil
  • Salt to taste
  • Oil for deep frying

INSTRUCTIONS

Chole:

  1. Heat oil in a pan or pressure cooker. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and green chilies. Sauté for a minute.
  4. Add tomato puree and cook until the oil separates from the masala.
  5. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  6. Add soaked and drained chickpeas (chole) and mix until they are well coated with the masala.
  7. If using a pressure cooker, add water just enough to cover the chickpeas. Close the lid and cook for about 4-5 whistles or until the chole are soft and cooked. If using a pan, add water and cook covered on medium-low heat until the chole are cooked and tender.
  8. Once the chole are cooked, add garam masala and amchur. Mix well and cook for a few more minutes.
  9. Garnish with freshly chopped coriander leaves.

Bhature:

  1. In a mixing bowl, combine all-purpose flour, baking powder, baking soda, salt, and oil. Mix well.
  2. Add yogurt to the flour mixture and knead to form a soft dough. Add water as needed to adjust the consistency of the dough.
  3. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
  4. Divide the dough into small portions and roll each portion into a round or oval shape using a rolling pin.
  5. Heat oil in a deep frying pan or kadai. Fry the rolled dough one at a time until they puff up and turn golden brown on both sides.
  6. Remove the bhature from the oil and place them on a paper towel to absorb excess oil.

TIPS

  • Soaking the chickpeas overnight helps in reducing the cooking time and ensures that they cook evenly.
  • Adjust the spice levels according to your taste preferences. You can increase or decrease the amount of red chili powder and green chilies.
  • For a healthier version, you can bake the bhature instead of deep-frying them. Brush them with a little oil and bake in a preheated oven at 180°C (350°F) until they turn golden brown.
  • Serve Chole Bhature with sliced onions, lemon wedges, and pickle for a complete and delicious meal.
  • Garnish the chole with freshly chopped coriander leaves for added freshness and flavor.
