INGREDIENTS

INSTRUCTIONS

For the Khandvi Rolls:

  1. In a bowl, mix chickpea flour, whisked yogurt, water, turmeric powder, ginger paste, green chili paste, and salt to create a smooth batter.

  2. Heat a non-stick pan over medium heat. Pour the batter into the pan and cook, stirring constantly, until it thickens and doesn’t stick to the pan. This should take about 10-15 minutes.

  3. Quickly spread a thin layer of the cooked batter onto a clean, greased surface (like a kitchen counter or a flat plate). Allow it to cool slightly.

  4. Once the batter has cooled enough to handle, cut it into thin strips using a knife.

  5. Carefully roll each strip tightly to create the khandvi rolls. Repeat this process with all the strips.

For the Tempering:

  1. In a small pan, heat oil over medium heat. Add mustard seeds and let them splutter.

  2. Add cumin seeds, asafoetida, curry leaves, and slit green chilies. Sauté for a minute until aromatic.

Assembling:

  1. Arrange the rolled khandvi on a serving plate.

  2. Drizzle the prepared tempering over the khandvi rolls.

  3. If desired, sprinkle grated coconut over the top for extra flavor.

  4. Garnish with fresh chopped cilantro leaves.
