INGREDIENTS
- 1 cup chickpea flour (besan)
- 1/4 cup finely chopped onion

- 1/4 cup finely chopped bell pepper (any color)
- 2-3 tablespoons chopped fresh cilantro
- 1-2 green chilies, finely chopped (adjust to taste)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garam masala (optional)
- Salt to taste
- Water (about 3/4 to 1 cup) to make the batter
- Cooking oil or ghee for frying
INSTRUCTIONS
Chickpea Flour Batter:
In a mixing bowl, combine the chickpea flour, chopped onion, chopped tomato, chopped bell pepper, chopped cilantro, chopped green chilies, cumin seeds, red chili powder, turmeric powder, garam masala (if using), and salt.
Gradually add water and whisk the mixture to form a smooth batter. The batter should have a pouring consistency, similar to that of pancake batter. Let the batter rest for about 10-15 minutes.
Making Chickpea Flour Pancakes (Besan Chilla):
Heat a non-stick skillet or pan over medium heat. Add a few drops of oil or ghee and spread it evenly on the surface of the pan.
Pour a ladleful of the chickpea flour batter onto the center of the pan.
Using the back of the ladle, spread the batter in a circular motion to form a thin pancake.
Drizzle a few drops of oil or ghee around the edges of the pancake.
Cook the pancake for about 2-3 minutes on one side until the edges start to lift and the bottom is golden brown.
Flip the pancake and cook the other side for an additional 2-3 minutes until it’s cooked and lightly browned.
Repeat the process with the remaining batter, adding a little oil or ghee before making each pancake.
