INGREDIENTS
- 1 cup chickpea flour (besan)

INSTRUCTIONS
In a mixing bowl, combine chickpea flour, cumin seeds, turmeric powder, red chili powder, and salt.
Gradually add water and mix to form a thick batter. The consistency should be similar to a pancake batter.
Add the sliced onions, potato slices, grated zucchini (if using), green chilies, and ginger to the batter. Mix well to coat the vegetables with the batter.
Heat oil in a deep frying pan or a wok.
Test the oil’s temperature by dropping a small portion of batter into it. If it rises to the surface immediately without changing color, the oil is ready.
Carefully drop spoonfuls of the vegetable and chickpea flour batter into the hot oil to make fritters. Make sure not to overcrowd the pan.
Fry the fritters until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and drain excess oil on a paper towel.
Once the fritters cool down slightly, they are ready to be served.
