Chickpea and Spinach Stir-Fry is a simple and wholesome dish that combines protein-rich chickpeas with vibrant spinach in a blend of aromatic spices. This stir-fry offers a harmonious combination of flavors and textures, making it a quick and nutritious option for a satisfying meal. INGREDIENTS

  • 2 cups cooked chickpeas (canned or cooked from dry)
  • 4 cups fresh spinach leaves, washed and chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/4 teaspoon turmeric powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Chopped fresh cilantro for garnish
  • Optional toppings: chopped tomatoes, sliced almonds, yogurt

INSTRUCTIONS

  1. In a large skillet or wok, heat olive oil over medium heat.

  2. Add chopped onion and sauté until it becomes translucent.

  3. Add minced garlic and sauté for another 30 seconds until fragrant.

  4. Add ground cumin, ground coriander, red pepper flakes, turmeric powder, salt, and pepper to the skillet. Stir to coat the onions and garlic with the spices.

  5. Add the cooked chickpeas to the skillet and stir-fry for a few minutes to warm them up and coat them with the spices.

  6. Add the chopped spinach to the skillet. Stir-fry until the spinach wilts down and is incorporated with the chickpeas and spices.

  7. Squeeze the lemon juice over the stir-fry and give it a final toss.

  • Serve the Chickpea and Spinach Stir-Fry as a flavorful and nutritious dish.
