INGREDIENTS
- 2 cups cooked chickpeas (canned or cooked from dry)
- 4 cups fresh spinach leaves, washed and chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/4 teaspoon turmeric powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Juice of 1 lemon
- Chopped fresh cilantro for garnish

INSTRUCTIONS
In a large skillet or wok, heat olive oil over medium heat.
Add chopped onion and sauté until it becomes translucent.
Add minced garlic and sauté for another 30 seconds until fragrant.
Add ground cumin, ground coriander, red pepper flakes, turmeric powder, salt, and pepper to the skillet. Stir to coat the onions and garlic with the spices.
