Chicken Vada Recipe

INGREDIENTS
- 1 cup ground chicken
- 1/2 cup finely chopped onions
- 2-3 green chilies, finely chopped
- 1/4 cup chopped coriander leaves
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- Salt to taste
- Oil for deep frying
For the batter:
- 1 cup chickpea flour (besan)
- 1/4 teaspoon baking soda
- Water as needed
- Salt to taste
INSTRUCTIONS
In a mixing bowl, combine the ground chicken, chopped onions, green chilies, ginger-garlic paste, coriander leaves, red chili powder, turmeric powder, cumin powder, garam masala, and salt. Mix well to combine all the ingredients.
Heat oil in a deep pan or kadai for deep frying.
Meanwhile, prepare the batter by combining the chickpea flour, baking soda, salt, and enough water to make a thick batter. Mix well until there are no lumps.
Take a small portion of the chicken mixture and shape it into a small ball. Flatten it slightly to form a vada shape. Repeat the same process with the remaining chicken mixture.
Dip each chicken vada into the prepared batter, ensuring it is well-coated on all sides.
Carefully drop the coated vadas into the hot oil and fry them on medium heat until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
Once the vadas are cooked, remove them from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
