Chicken and Vegetable Soup is a nutritious and comforting dish that is packed with protein from the chicken and an array of vitamins and minerals from the vegetables. This soup is a great option for Indian weight loss diets as it is low in calories and fat while providing essential nutrients. It is also a satisfying and filling meal that can be enjoyed as a light dinner or a wholesome lunch option.

INGREDIENTS

  • 200 grams boneless chicken breast, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 cup cabbage, shredded
  • 1 cup spinach, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

INSTRUCTIONS

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.

  2. Add the diced chicken to the pot and cook until it is no longer pink.

  3. Add the diced carrot, celery, and shredded cabbage to the pot. Stir everything together and cook for a few minutes until the vegetables start to soften.

  4. Pour in the chicken broth and bring the soup to a boil. Reduce the heat to low and let it simmer for about 15-20 minutes until the vegetables are tender.

  5. Add the chopped spinach, dried thyme, and dried rosemary to the pot. Stir well and let the soup simmer for another 5 minutes.

  6. Season with salt and pepper according to your taste preference. Adjust the seasoning as needed.

  7. Remove the pot from heat. Ladle the soup into bowls and garnish with fresh chopped parsley.

  8. Serve the Chicken and Vegetable Soup hot and enjoy

TIPS

  1. Feel free to add other vegetables of your choice, such as bell peppers, zucchini, or broccoli. Customize the soup according to your preferences.

  2. For added flavor, you can use homemade chicken broth or low-sodium chicken broth instead of water.

  3. If you prefer a thicker soup, you can add a small amount of cornstarch mixed with water to the soup and simmer until it thickens.

  4. To make the soup more filling, you can add cooked quinoa or brown rice to the soup during the last few minutes of cooking.

  5. Sprinkle some lemon juice over the soup before serving for a refreshing twist.

  6. Adjust the seasoning according to your taste preferences. You can also add herbs and spices like paprika or cayenne pepper for a spicy kick.

  7. Serve the Chicken and Vegetable Soup with a side of whole wheat bread or a light salad for a well-rounded meal.
