Chicken and Vegetable Skewers with Quinoa is a healthy and nutritious dish that combines grilled chicken and colorful vegetables on skewers. The marinade adds flavor to the chicken, while the grilling process enhances the smoky taste. INGREDIENTS

  • 2 boneless, skinless chicken breasts, cut into chunks
  • 1 bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 8-10 cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

INSTRUCTIONS

  1. In a bowl, combine the olive oil, paprika, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well to make a marinade.

  2. Add the chicken chunks to the marinade and coat them evenly. Let it marinate for at least 30 minutes in the refrigerator.

  3. Preheat the grill or grill pan over medium heat.

  4. Thread the marinated chicken chunks, bell pepper, zucchini, red onion, and cherry tomatoes onto the soaked wooden skewers, alternating between the ingredients.

  5. Grill the skewers for about 10-12 minutes, turning them occasionally, until the chicken is cooked through and the vegetables are tender.

  6. Remove the skewers from the grill and let them rest for a few minutes.

TIPS

  1. If you don’t have a grill or grill pan, you can also cook the skewers in the oven. Preheat the oven to 200°C (400°F) and place the skewers on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the chicken is cooked through.
