CHICKEN AND VEGETABLE SKEWERS WITH QUINOA RECIPE

INGREDIENTS
- 2 boneless, skinless chicken breasts, cut into chunks
- 1 bell pepper, cut into chunks

INSTRUCTIONS
In a bowl, combine the olive oil, paprika, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well to make a marinade.
Add the chicken chunks to the marinade and coat them evenly. Let it marinate for at least 30 minutes in the refrigerator.
Preheat the grill or grill pan over medium heat.
Thread the marinated chicken chunks, bell pepper, zucchini, red onion, and cherry tomatoes onto the soaked wooden skewers, alternating between the ingredients.
Grill the skewers for about 10-12 minutes, turning them occasionally, until the chicken is cooked through and the vegetables are tender.

TIPS
