5/5

Chicken and mushroom breakfast quiche is a savory and satisfying dish that is perfect for a special breakfast or brunch. It features a flaky pie crust filled with a delicious mixture of cooked chicken, mushrooms, cheese, and eggs. This flavorful quiche can be prepared in advance and enjoyed hot or cold. It’s a versatile dish that can be customized with your favorite herbs and spices.

INGREDIENTS

  • 1 prepared pie crust (store-bought or homemade)
  • 1 cup cooked chicken, diced
  • 1 cup mushrooms, sliced
  • 1/2 cup shredded cheese (such as cheddar or Swiss)
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing the pie dish

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish with cooking spray or olive oil.
  2. Roll out the pie crust and press it into the greased pie dish, trimming any excess crust.
  3. In a skillet, sauté the mushrooms over medium heat until they release their moisture and become tender. Remove from heat and let cool.
  4. In a bowl, whisk together the eggs, milk, dried thyme, salt, and pepper until well combined.
  5. Spread the diced chicken and sautéed mushrooms evenly over the prepared pie crust. Sprinkle the shredded cheese on top.
  6. Pour the egg mixture over the filling ingredients, making sure it is evenly distributed.
  7. Place the quiche in the preheated oven and bake for about 35-40 minutes, or until the center is set and the top is golden brown.
  8. Remove from the oven and let the quiche cool for a few minutes before slicing and serving.

TIPS

  1. You can use leftover cooked chicken or rotisserie chicken for convenience. If using raw chicken, cook it before adding it to the quiche.
  2. Feel free to add other vegetables like spinach, bell peppers, or onions for added flavor and nutrition.
  3. Customize the cheese by using your favorite variety or a combination of cheeses.
  4. Experiment with different herbs and spices to enhance the flavor, such as dried basil or rosemary.
  5. Leftovers can be stored in the refrigerator and reheated for future breakfasts or lunches.
