INGREDIENTS
- 1 cup lentils (any variety), rinsed
- 250 grams boneless chicken breast, cut into small pieces
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1 bay leaf
- 4 cups chicken broth
- 2 cups water
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
INSTRUCTIONS
Heat olive oil in a large pot over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until the vegetables are slightly softened.
Add the minced garlic, cumin powder, turmeric powder, paprika, bay leaf, salt, and pepper to the pot. Stir well to coat the vegetables with the spices.
Add the chicken pieces to the pot and cook until they are no longer pink. Stir occasionally to ensure even cooking.
Add the rinsed lentils to the pot and stir to combine with the other ingredients.
Pour in the chicken broth and water. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes until the lentils are tender and the flavors are well combined.
Once the soup is cooked, remove the bay leaf and adjust the seasoning if needed.
Serve the Chicken and Lentil Soup hot, garnished with fresh cilantro.
TIPS
- You can add additional vegetables such as spinach, bell peppers, or zucchini to the soup for extra nutrition and flavor.
- Feel free to adjust the spices according to your taste preferences. You can add more or less of the cumin, turmeric, or paprika based on your preference for spiciness.
- To save time, you can use pre-cooked chicken or leftover chicken instead of cooking raw chicken in the soup.
- If you prefer a thicker consistency, you can blend a portion of the soup using an immersion blender or a regular blender and then add it back to the pot.
- Serve the soup with a side of whole wheat bread or a fresh salad for a complete and balanced meal.
