INGREDIENTS

  • 1 pound ground chicken
  • 3 hard-boiled eggs, chopped
  • 1 cup mixed vegetables (carrots, bell peppers, water chestnuts, etc.), finely chopped
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Lettuce leaves (such as iceberg or butter lettuce) for wrapping
  • Optional toppings: chopped peanuts, cilantro, lime wedges

INSTRUCTIONS

  1. Heat a large skillet or wok over medium heat and add a little oil.
  2. Add the minced garlic and grated ginger to the skillet and sauté for about 1 minute until fragrant.
  3. Add the ground chicken to the skillet and cook until it is no longer pink, breaking it up into small crumbles.
  4. Stir in the mixed vegetables and continue cooking for another 2-3 minutes until the vegetables are tender.
  5. In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil.
  6. Pour the sauce over the chicken and vegetables in the skillet and mix well to coat.
  7. Add the chopped hard-boiled eggs and green onions to the skillet and stir to combine.
  8. Cook for an additional 1-2 minutes to heat the eggs.
  9. Remove from heat and let the filling cool slightly.
  10. To serve, spoon the chicken and egg filling onto individual lettuce leaves.
  11. Top with optional toppings such as chopped peanuts, cilantro, and a squeeze of lime juice.
  12. Wrap the lettuce leaves around the filling to form lettuce wraps.

TIPS
