5/5
Chicken and Egg Lettuce Wraps are a delicious and healthy option for a light and flavorful meal. Ground chicken is cooked with a variety of vegetables and seasoned with soy sauce, hoisin sauce, and sesame oil for a savory and aromatic filling. The addition of chopped hard-boiled eggs adds protein and texture to the wraps. Served in fresh lettuce leaves, these wraps are refreshing and perfect for a low-carb or gluten-free option.
INGREDIENTS
- 1 pound ground chicken
- 3 hard-boiled eggs, chopped
- 1 cup mixed vegetables (carrots, bell peppers, water chestnuts, etc.), finely chopped

INSTRUCTIONS
- Heat a large skillet or wok over medium heat and add a little oil.
- Add the minced garlic and grated ginger to the skillet and sauté for about 1 minute until fragrant.
- Add the ground chicken to the skillet and cook until it is no longer pink, breaking it up into small crumbles.
- Stir in the mixed vegetables and continue cooking for another 2-3 minutes until the vegetables are tender.
- In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil.
- Pour the sauce over the chicken and vegetables in the skillet and mix well to coat.
- Add the chopped hard-boiled eggs and green onions to the skillet and stir to combine.
- Cook for an additional 1-2 minutes to heat the eggs.
- Remove from heat and let the filling cool slightly.
- To serve, spoon the chicken and egg filling onto individual lettuce leaves.
- Top with optional toppings such as chopped peanuts, cilantro, and a squeeze of lime juice.
- Wrap the lettuce leaves around the filling to form lettuce wraps.
TIPS
- Customize the filling by adding other ingredients such as mushrooms, water chestnuts, or bamboo shoots for added crunch and flavor.
- Adjust the seasoning according to your taste preferences. You can add a little sriracha or chili flakes for some heat.
- Make sure to drain any excess liquid from the cooked chicken and vegetables to prevent the lettuce wraps from becoming soggy.
- Serve the lettuce wraps immediately after assembling to maintain the crispness of the lettuce.
- Feel free to experiment with different types of lettuce, such as romaine or Bibb lettuce, based on your preference.
- Prepare extra hard-boiled eggs to have as a side or for future meals.
- These lettuce wraps can be served as an appetizer or as a light main course.
