INGREDIENTS
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 3 ripe bananas, mashed
- ½ cup brown sugar
- ¼ cup vegetable oil
- 2 tablespoons chia seeds
- 1 teaspoon vanilla extract
- ½ cup milk (dairy or plant-based)
- ½ cup chopped walnuts (optional)
INSTRUCTIONS
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In another bowl, mix together the mashed bananas, brown sugar, vegetable oil, chia seeds, vanilla extract, and milk until well combined.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing.
- If using walnuts, fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the banana bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
TIPS
- Use ripe bananas with brown spots for the best flavor and sweetness.
- Feel free to adjust the amount of brown sugar according to your taste preference. You can reduce or increase it based on how sweet you like your banana bread.
- If you prefer a gluten-free version, you can use a gluten-free flour blend in place of all-purpose flour.
- Customize your banana bread by adding other mix-ins like chocolate chips, dried fruits, or shredded coconut.
- Store the Chia Seed Banana Bread in an airtight container at room temperature for up to 3 days, or refrigerate for longer shelf life.
