INGREDIENTS

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • 3 ripe bananas, mashed
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • 2 tablespoons chia seeds

  • ½ cup milk (dairy or plant-based)
  • ½ cup chopped walnuts (optional)

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In another bowl, mix together the mashed bananas, brown sugar, vegetable oil, chia seeds, vanilla extract, and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing.
  5. If using walnuts, fold them into the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the banana bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
