Cauliflower Rice Stir-Fry with Shrimp is a low-carb and protein-rich Indian dish suitable for weight loss. Cauliflower rice replaces traditional rice, and shrimp provides lean protein.

INGREDIENTS

For the Cauliflower Rice Stir-Fry:

  • 1 small head of cauliflower, washed and grated (or store-bought cauliflower rice)
  • 1/2 pound medium shrimp, peeled and deveined
  • 1 cup mixed vegetables (such as bell peppers, carrots, peas)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil

INSTRUCTIONS

For the Cauliflower Rice Stir-Fry:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.

  2. Add minced garlic and ginger to the skillet. Sauté for about 30 seconds until fragrant.

  3. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they start to soften.

  4. Push the vegetables to the side of the skillet and add the shrimp. Cook for 2-3 minutes on each side, or until the shrimp turns pink and opaque.

  5. Push the shrimp and vegetables to the side and add a bit more oil to the empty space in the skillet.

  6. Add the grated cauliflower (cauliflower rice) to the skillet. Cook for 3-4 minutes, stirring occasionally, until the cauliflower is cooked but still slightly crunchy.

  7. In a small bowl, mix together low-sodium soy sauce, oyster sauce (if using), sesame oil, and red pepper flakes.

  8. Pour the sauce over the cauliflower rice and shrimp mixture. Toss everything together to combine and coat with the sauce.

  9. Season with salt and pepper to taste.

Serve:

  1. Serve the cauliflower rice stir-fry with shrimp in bowls.

  2. Garnish with chopped green onions.
