INGREDIENTS

INSTRUCTIONS

  1. If using fresh cauliflower, wash and chop it into florets. Place the florets in a food processor and pulse until they resemble rice-like granules. You can also use store-bought cauliflower rice.

  2. Place the cauliflower rice in a microwave-safe bowl and microwave for about 3-4 minutes, or until it’s softened. Let it cool slightly.

  3. Use a clean kitchen towel or paper towels to squeeze out as much moisture as possible from the cauliflower rice.

  4. In a mixing bowl, combine the squeezed cauliflower rice, finely chopped onion, grated cheddar cheese, almond flour or coconut flour, egg, garlic powder, onion powder, salt, and pepper. Mix well to form a cohesive mixture.

  5. Heat a skillet over medium heat and add a thin layer of cooking oil.

  6. Take a spoonful of the cauliflower mixture and shape it into a small patty using your hands. Place the patty onto the skillet.

  7. Flatten the patty with a spatula and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

  8. Repeat the process with the remaining cauliflower mixture, adding more oil to the skillet as needed.

  9. Once all the hash browns are cooked, transfer them to a plate lined with paper towels to absorb excess oil.

  10. Serve the Cauliflower Hash Browns warm as a delicious and lower-carb alternative to traditional hash browns.
