Cauliflower Fried Rice is a healthy and delicious alternative to traditional fried rice. It is made with cauliflower rice instead of regular rice, making it low in carbohydrates and suitable for Indian weight loss diets. Packed with vegetables and flavors, this dish is a nutritious and satisfying option for a meal.

INGREDIENTS

  • 1 medium-sized cauliflower head, grated or processed into rice-like texture
  • 1 cup mixed vegetables (carrots, peas, bell peppers, etc.), finely chopped
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Spring onions, chopped (for garnish)
  • Optional: scrambled eggs or tofu for added protein

INSTRUCTIONS

  1. Heat sesame oil in a large pan or wok over medium heat.
  2. Add minced garlic, grated ginger, and chopped onions. Sauté until onions become translucent.
  3. Add the mixed vegetables and cook for a few minutes until they become slightly tender.
  4. Push the vegetables to one side of the pan and add the cauliflower rice to the other side.
  5. Stir-fry the cauliflower rice for about 5-7 minutes until it becomes tender but not mushy.
  6. Mix the cauliflower rice with the vegetables in the pan.
  7. Add low-sodium soy sauce, salt, and black pepper. Mix well to coat the rice and vegetables evenly.
  8. If using scrambled eggs or tofu, push the rice and vegetables to one side of the pan, and scramble the eggs or cook the tofu on the other side. Then mix them together.
  9. Cook for an additional 2-3 minutes, stirring occasionally to prevent sticking.
  10. Remove from heat and garnish with chopped spring onions.
  11. Serve hot as a standalone meal or as a side dish with your favorite protein.

TIPS

  1. Be careful not to overcook the cauliflower rice as it can become mushy.
  2. Feel free to add other spices or seasonings of your choice to enhance the flavor.
  3. Customize the vegetable selection according to your preference.
  4. You can add cooked chicken, shrimp, or tofu for added protein.
  5. Leftover cauliflower fried rice can be refrigerated and enjoyed the next day.
