INGREDIENTS

  • 1 cup flattened rice (poha)
  • 1 medium-sized carrot, grated
  • 1/2 cup green peas (fresh or frozen)
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • A pinch of asafoetida (hing)
  • 8-10 curry leaves
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving (optional)

INSTRUCTIONS

  1. Rinse the flattened rice (poha) in water for a few seconds and drain. Keep it aside.
  2. Heat oil in a pan or kadai over medium heat. Add mustard seeds and let them splutter.
  3. Add asafoetida (hing), curry leaves, and chopped green chilies. Saute for a few seconds.
  4. Add the finely chopped onions and cook until they turn translucent.
  5. Add the grated carrot and green peas. Mix well and cook for 3-4 minutes until the vegetables are slightly tender.
  6. Add turmeric powder and salt. Mix well.
  7. Add the rinsed flattened rice (poha) to the pan. Gently mix everything together until the poha is evenly coated with the spices and vegetables.
  8. Cover the pan and let it cook for about 2-3 minutes on low heat, allowing the flavors to blend.
  9. Remove the lid and give it a gentle stir. Cook for another 1-2 minutes until the poha is soft and heated through.
  10. Turn off the heat and garnish with freshly chopped coriander leaves.
  11. Serve the Carrot and Peas Poha hot as a breakfast or snack. You can squeeze some lemon juice on top for added tanginess if desired.
