Broccoli Paratha is a delicious and nutritious Indian flatbread made with a filling of finely chopped broccoli and spices. The parathas are made using whole wheat flour and are stuffed with the flavorful broccoli mixture. This recipe is a great way to incorporate the goodness of broccoli into your meal. The parathas are rolled out and cooked on a griddle until golden brown and crispy. Broccoli Parathas can be enjoyed as a breakfast dish, lunch, or dinner, and are often served with yogurt, pickle, or any side dish of your choice. They are not only tasty but also packed with vitamins, minerals, and fiber, making them a healthy option for the whole family.

INGREDIENTS

  • 1 cup whole wheat flour
  • 1 cup finely chopped broccoli
  • 1/4 cup finely chopped onions
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • Salt to taste
  • Water for kneading the dough
  • Ghee or oil for cooking

INSTRUCTIONS

  1. In a mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead to make a soft and pliable dough. Cover it and let it rest for about 15-20 minutes.
  2. Meanwhile, blanch the chopped broccoli in boiling water for about 2 minutes. Drain and let it cool.
  3. In a separate pan, heat a little oil or ghee. Add the chopped onions, green chilies, and ginger-garlic paste. Sauté until the onions turn translucent.
  4. Add the blanched broccoli, cumin powder, turmeric powder, red chili powder (if using), and salt. Mix well and cook for a few minutes until the flavors are well combined. Remove from heat and let it cool.
  5. Divide the dough into small equal-sized balls. Take one dough ball and roll it into a small disc using a rolling pin.
  6. Place a spoonful of the broccoli mixture in the center of the rolled dough disc. Bring the edges together and seal it, forming a ball again.
  7. Flatten the ball slightly and roll it gently to make a paratha, about 6-7 inches in diameter.
  8. Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa and cook until golden brown spots appear on one side. Flip it over and cook the other side as well.
  9. Apply a little ghee or oil on both sides of the paratha and cook until it is crispy and well cooked.
  10. Remove from the tawa and repeat the process with the remaining dough and filling to make more parathas.
  11. Serve the hot and delicious broccoli parathas with yogurt, pickle, or any side dish of your choice.
