INGREDIENTS

  • Bhindi (Okra), washed and dried
  • Onion, finely chopped

  • Green chili, slit lengthwise

  • Turmeric powder
  • Red chili powder
  • Coriander powder
  • Garam masala
  • Salt to taste
  • Cooking oil

INSTRUCTIONS

  1. Heat oil in a pan and add cumin seeds. Let them crackle.
  2. Add finely chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add finely chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add slit green chili and cook for a few minutes.
  7. Meanwhile, cut the washed and dried okra into small pieces.
  8. Add the okra to the pan and mix gently until it is well-coated with the masala.
  9. Cover the pan and cook on low heat until the okra is tender, stirring occasionally.
  10. Sprinkle garam masala and mix well.
  11. Cook for another minute, allowing the flavors to blend.
  12. Serve hot with roti or rice.

  2. To reduce the sliminess of okra, make sure to wash and dry it thoroughly before cutting.
  3. Adding a teaspoon of lemon juice while cooking can help reduce the sliminess further.
