Beef Fajita Lettuce Wraps are a delicious and healthy alternative to traditional flour tortilla wraps. This recipe features marinated and grilled beef strips, sautéed peppers and onions, and flavorful spices, all wrapped in crisp lettuce leaves. It’s a refreshing and low-carb option that is packed with flavor and perfect for a light and satisfying meal.

INGREDIENTS

  • 1 pound beef (such as flank steak or sirloin), thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Lettuce leaves (such as iceberg or romaine), for wrapping
  • Optional toppings: salsa, guacamole, sour cream, chopped tomatoes, shredded cheese

INSTRUCTIONS

  1. In a bowl, combine the sliced beef, minced garlic, chili powder, cumin, paprika, salt, and black pepper. Mix well to coat the beef with the spices. Let it marinate for at least 30 minutes, or overnight in the refrigerator for more flavor.

  2. Heat 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat. Add the marinated beef slices and cook for about 4-5 minutes, or until browned and cooked to your desired doneness. Remove the beef from the skillet and set aside.

  3. In the same skillet, add the remaining tablespoon of olive oil and sauté the bell pepper and onion slices until they are tender-crisp, about 5 minutes. Season with salt and pepper to taste.

  4. To assemble the lettuce wraps, take a lettuce leaf and place a few slices of cooked beef in the center. Top with sautéed peppers and onions, and any desired toppings such as salsa, guacamole, sour cream, chopped tomatoes, or shredded cheese.

  5. Repeat with the remaining lettuce leaves and filling ingredients.

  6. Serve the beef fajita lettuce wraps as a light meal or appetizer.

TIPS

  1. For an extra kick of flavor, you can add sliced jalapeños or hot sauce to the filling.
  2. Customize the toppings to your liking. Add fresh cilantro, diced avocado, or a squeeze of lime juice for added freshness.
  3. If you prefer a spicier taste, increase the amount of chili powder or add some crushed red pepper flakes to the beef marinade.
  4. Experiment with different types of lettuce, such as butter lettuce or Boston lettuce, for the wraps.
