INGREDIENTS
- 2-3 pounds pork shoulder or pork butt
- Salt and black pepper, to taste
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1 cup barbecue sauce
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder (optional)

INSTRUCTIONS
Preheat your oven to 325°F (165°C).
Season the pork shoulder or pork butt generously with salt and black pepper on all sides.
Heat a large oven-safe pot or Dutch oven over medium-high heat. Add the vegetable oil and heat it.
Place the seasoned pork shoulder or pork butt in the pot and sear it on all sides until browned, about 3-4 minutes per side. Remove the pork from the pot and set it aside.
In the same pot, add the thinly sliced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.
Add the barbecue sauce, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and chili powder (if using) to the pot. Stir well to combine the sauce ingredients.
Return the seared pork shoulder or pork butt to the pot, nestling it in the sauce. Cover the pot with a lid.
Transfer the pot to the preheated oven and cook for about 3-4 hours, or until the pork is tender and easily falls apart.
Remove the pot from the oven and use two forks to shred the cooked pork in the sauce. Stir well to coat the pork with the sauce.
Serve the pulled pork on hamburger buns, topped with coleslaw or pickles if desired.

- If you have a slow cooker, you can cook the pork on low heat for 8-10 hours instead of using the oven.
