These Baked Spinach and Cheese Puffs are a healthy and flavorful snack option. They are packed with nutritious ingredients like spinach and cheese, providing a good amount of vitamins, minerals, and protein. These puffs are baked instead of fried, making them a healthier alternative to traditional fried snacks. They are also suitable for Indian weight loss diets as they are made with whole wheat flour and contain a good balance of nutrients.

INGREDIENTS

  • 2 cups fresh spinach, chopped
  • 1 cup grated cheese (cheddar or mozzarella)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin powder
  • Salt and pepper to taste
  • 2 eggs
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the chopped spinach, grated cheese, onion, bell pepper, garlic powder, cumin powder, salt, and pepper. Mix well.
  3. In a separate bowl, beat the eggs lightly and add them to the spinach and cheese mixture. Mix until combined.
  4. Add the whole wheat flour and baking powder to the mixture and stir until everything is well incorporated.
  5. Take small portions of the mixture and shape them into small puffs using your hands. Place them on the prepared baking sheet.
  6. Bake in the preheated oven for about 15-20 minutes or until the puffs are golden brown and firm.
  7. Remove from the oven and let them cool for a few minutes before serving.

TIPS

  1. You can customize the recipe by adding other vegetables like grated carrots or corn kernels for added flavor and nutrition.
  2. Make sure to squeeze out any excess moisture from the chopped spinach before adding it to the mixture to prevent the puffs from becoming soggy.
  3. Serve these puffs with a side of green chutney or tomato ketchup for dipping.
  4. Leftover puffs can be stored in an airtight container in the refrigerator and reheated in the oven or microwave before serving.
