5/5

Baked Eggplant Fries are a tasty and healthier alternative to traditional fries. These crispy and flavorful fries are made by coating eggplant slices in a seasoned breadcrumb mixture and baking them until golden brown. They make a great appetizer or side dish and are perfect for those looking for a gluten-free or low-carb option.

INGREDIENTS

  • 1 large eggplant
  • 1 cup breadcrumbs (you can use gluten-free breadcrumbs for a gluten-free option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • Cooking spray

INSTRUCTIONS

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.
  2. Cut the eggplant into fry-like shapes, about 1/2-inch thick.
  3. In a shallow bowl, combine the breadcrumbs, Parmesan cheese (if using), garlic powder, paprika, salt, and black pepper.
  4. Dip each eggplant slice into the beaten eggs, making sure to coat it well.
  5. Roll the egg-coated slice in the breadcrumb mixture, pressing gently to ensure it adheres to the eggplant.
  6. Place the coated eggplant slices in a single layer on the prepared baking sheet.
  7. Spray the fries lightly with cooking spray to help them crisp up.
  8. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.
  9. Remove from the oven and let them cool slightly before serving.
