Baked Chickpea Flour Snacks (Pakoras)
Baked Chickpea Flour Snacks, also known as Baked Pakoras, are a lighter version of the popular Indian fried snack. These baked snacks are made using chickpea flour and a variety of vegetables and spices. By baking them instead of frying, you can enjoy the same flavors and textures with less oil.
INGREDIENTS
For the batter:
- 1 cup chickpea flour (besan)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Water, as needed
- Optional: Chopped cilantro or other herbs
For the filling:
- 1 cup mixed vegetables (such as finely chopped spinach, grated carrots, finely chopped bell peppers, or onions)
- 1/2 cup crumbled paneer (Indian cottage cheese) or grated cheese (optional)
- Salt and pepper to taste
INSTRUCTIONS
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a mixing bowl, combine the chickpea flour, cumin seeds, turmeric powder, red chili powder, garam masala, and salt.
Gradually add water to the dry ingredients, stirring constantly, until you achieve a smooth batter consistency. The batter should be thick enough to coat the back of a spoon.
In a separate bowl, mix the chopped vegetables, crumbled paneer (if using), salt, and pepper.
Fold the vegetable mixture into the chickpea flour batter until well combined.
Using a spoon or your hands, drop spoonfuls of the batter onto the prepared baking sheet, shaping them into small rounds or oval shapes.
Bake the chickpea flour snacks in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the outside.
Once baked, remove the snacks from the oven and let them cool slightly before serving.
