Baked Chicken and Broccoli Casserole is a comforting and satisfying dish that combines tender chicken, blanched broccoli, and cooked rice in a creamy and cheesy sauce. The casserole is baked to perfection, creating a hearty and flavorful meal that’s perfect for gatherings or weeknight dinners

INGREDIENTS

  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups broccoli florets, blanched
  • 2 cups cooked rice (white or brown)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup milk (any type)
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

INSTRUCTIONS

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.

  2. In a large bowl, combine the cooked chicken, blanched broccoli florets, and cooked rice.

  3. In a saucepan, melt the butter over medium heat. Stir in the all-purpose flour to create a roux. Cook the roux for about 1-2 minutes, stirring constantly, until it turns a light golden color.

  4. Gradually whisk in the milk and chicken broth, continuing to whisk until the mixture is smooth and thickened. This will form a creamy sauce.

  5. Stir in the garlic powder, onion powder, salt, and pepper into the sauce.

  6. Add 1 cup of shredded cheddar cheese to the sauce and stir until melted and combined.

  7. Pour the creamy cheese sauce over the chicken, broccoli, and rice mixture. Mix everything together until evenly coated.

  8. Transfer the mixture to the greased baking dish and spread it out evenly.

  9. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.

  10. Bake in the preheated oven for about 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.

TIPS

  • You can use leftover cooked chicken or rotisserie chicken for convenience.
