Baked Cabbage and Carrot Vada Fritters are nutritious and flavorful snacks made with cabbage, carrot, lentils, and spices. They are baked instead of fried, making them a healthier option for weight loss.

INGREDIENTS

  • 1 cup shredded cabbage
  • 1/2 cup grated carrot
  • 1/2 cup chana dal (split chickpeas)
  • 2 tablespoons rice flour
  • 2 tablespoons besan (gram flour)
  • 1 teaspoon ginger-garlic paste
  • 1 green chili, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • 2 tablespoons chopped coriander leaves
  • Cooking spray or oil for greasing

INSTRUCTIONS

  1. Soak the chana dal in water for 2-3 hours. Drain well.
  2. In a mixing bowl, combine the soaked chana dal, shredded cabbage, grated carrot, rice flour, besan, ginger-garlic paste, green chili, turmeric powder, red chili powder, cumin powder, salt, and chopped coriander leaves. Mix well to form a thick batter.
  3. Preheat the oven to 200°C (400°F).
  4. Grease a baking sheet or line it with parchment paper.
  5. Take a small portion of the batter and shape it into a small flat disc or vada.
  6. Place the vadas on the prepared baking sheet.
  7. Spray or brush some cooking oil on top of the vadas.
  8. Bake in the preheated oven for 20-25 minutes or until the vadas turn golden brown and crisp.
  9. Remove from the oven and let them cool slightly before serving.

PROCESS

  1. Make sure to drain the soaked chana dal well before using it in the batter to avoid excess moisture.
  2. You can adjust the spice level according to your preference by increasing or decreasing the amount of green chili and red chili powder.
  3. Serve the baked vadas hot with green chutney or tomato ketchup.
  4. These vadas can be enjoyed as a snack or as a part of a meal.
