Baked Cabbage and Carrot Vada Fritters are nutritious and flavorful snacks made with cabbage, carrot, lentils, and spices. They are baked instead of fried, making them a healthier option for weight loss.
INGREDIENTS
- 1 cup shredded cabbage
- 1/2 cup grated carrot
- 1/2 cup chana dal (split chickpeas)
- 2 tablespoons rice flour
- 2 tablespoons besan (gram flour)
- 1 teaspoon ginger-garlic paste
- 1 green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- Salt to taste
- 2 tablespoons chopped coriander leaves
- Cooking spray or oil for greasing
INSTRUCTIONS
- Soak the chana dal in water for 2-3 hours. Drain well.
- In a mixing bowl, combine the soaked chana dal, shredded cabbage, grated carrot, rice flour, besan, ginger-garlic paste, green chili, turmeric powder, red chili powder, cumin powder, salt, and chopped coriander leaves. Mix well to form a thick batter.
- Preheat the oven to 200°C (400°F).
- Grease a baking sheet or line it with parchment paper.
- Take a small portion of the batter and shape it into a small flat disc or vada.
- Place the vadas on the prepared baking sheet.
- Spray or brush some cooking oil on top of the vadas.
- Bake in the preheated oven for 20-25 minutes or until the vadas turn golden brown and crisp.
- Remove from the oven and let them cool slightly before serving.
PROCESS
- Make sure to drain the soaked chana dal well before using it in the batter to avoid excess moisture.
- You can adjust the spice level according to your preference by increasing or decreasing the amount of green chili and red chili powder.
- Serve the baked vadas hot with green chutney or tomato ketchup.
