Baingan Bharta is a popular North Indian dish made with roasted eggplant, spices, and aromatic flavors. INGREDIENTS

  • 1 large eggplant
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

INSTRUCTIONS

  1. Preheat the oven to 400°F (200°C). Make small slits on the eggplant and place it on a baking sheet. Roast it in the oven for about 30-40 minutes or until the skin is charred and the flesh becomes soft.
  2. Remove the eggplant from the oven and let it cool. Peel off the charred skin and mash the flesh with a fork. Set aside.
  3. Heat oil in a pan over medium heat. Add the chopped onions and cook until they become translucent.
  4. Add the minced garlic, grated ginger, and green chilies to the pan. Sauté for a minute until the raw smell disappears.
  5. Add the chopped tomatoes and cook until they become soft and mushy.
  6. Add the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes.
  7. Add the mashed eggplant to the pan and mix it with the masala.
  8. Cook the mixture for about 5-7 minutes, stirring occasionally, until all the flavors are well combined.
  9. Garnish with fresh coriander leaves and serve hot with roti or rice.

TIPS

  1. Choose a firm and shiny eggplant for the best results.
  2. Make sure to roast the eggplant until it is completely soft and the skin is charred. This enhances the smoky flavor of the dish.
  3. You can adjust the spice levels according to your preference by increasing or reducing the amount of chili powder.
  4. Adding a squeeze of lemon juice before serving enhances the tanginess of the dish.
  5. Leftover Baingan Bharta can be refrigerated and enjoyed the next day. The flavors tend to deepen and intensify over time.
