INGREDIENTS
- 1 large eggplant
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
INSTRUCTIONS
- Preheat the oven to 400°F (200°C). Make small slits on the eggplant and place it on a baking sheet. Roast it in the oven for about 30-40 minutes or until the skin is charred and the flesh becomes soft.
- Remove the eggplant from the oven and let it cool. Peel off the charred skin and mash the flesh with a fork. Set aside.
- Heat oil in a pan over medium heat. Add the chopped onions and cook until they become translucent.
- Add the minced garlic, grated ginger, and green chilies to the pan. Sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes.
- Add the mashed eggplant to the pan and mix it with the masala.
- Cook the mixture for about 5-7 minutes, stirring occasionally, until all the flavors are well combined.
- Garnish with fresh coriander leaves and serve hot with roti or rice.

- Choose a firm and shiny eggplant for the best results.
- Make sure to roast the eggplant until it is completely soft and the skin is charred. This enhances the smoky flavor of the dish.
- You can adjust the spice levels according to your preference by increasing or reducing the amount of chili powder.
- Adding a squeeze of lemon juice before serving enhances the tanginess of the dish.
