INGREDIENTS

  • 2 cups cauliflower florets
  • 2 medium potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

INSTRUCTIONS

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.
  4. Add the chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
  6. Add the cauliflower florets and cubed potatoes to the pan. Mix them with the masala.
  7. Cover the pan and cook on low heat until the vegetables are cooked and tender, stirring occasionally.
  8. Sprinkle garam masala over the cooked vegetables and mix well.
  9. Garnish with fresh coriander leaves and serve hot with roti or rice.

TIPS

  1. Cut the cauliflower florets into bite-sized pieces for even cooking.
  2. Parboil the cauliflower florets for a few minutes before adding them to the pan to ensure they cook evenly.
  3. You can adjust the spice level according to your preference by increasing or reducing the amount of red chili powder and green chilies.
  4. Add a squeeze of lemon juice before serving to enhance the flavors of the dish.
  5. Garnish with freshly chopped coriander leaves for added freshness and aroma.
  6. Serve Aloo Gobi with roti, naan, or rice for a complete and satisfying meal.
  7. Leftovers can be stored in the refrigerator for up to 2 days. Reheat before serving and adjust the seasoning if needed.
