INGREDIENTS

INSTRUCTIONS
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
- Add the cauliflower florets and cubed potatoes to the pan. Mix them with the masala.
- Cover the pan and cook on low heat until the vegetables are cooked and tender, stirring occasionally.
- Sprinkle garam masala over the cooked vegetables and mix well.
- Garnish with fresh coriander leaves and serve hot with roti or rice.

- Cut the cauliflower florets into bite-sized pieces for even cooking.
- Parboil the cauliflower florets for a few minutes before adding them to the pan to ensure they cook evenly.
